The sauces of life: “The real al Djote tart is green!”


All about the famous specialty of Nivelles, thanks to a meeting with the Grand Bailly of the brotherhood dedicated to this little wonder of flavor.

A few days ago, when I had once again succumbed to the double sin of gluttony and immodesty by posting on Facebook the photo of a succulent Tarte al Djote that I had just tasted, I was amazed at read the number of interrogative reactions on my post. These came mainly from friends from Beyond Quiévrain for whom the fine specialty of Nivelles is totally unknown. An eminent colleague of the DH even reminded me that to his knowledge, I had never published anything on the subject before… This is why, on this first day of spring, I do so with good grace…
