Barbecue Chicken with Coca Cola or Beer

Barbecue Chicken with Coca Cola or Beer

Ingredients:

1 teaspoon dry mustard

1 teaspoon granulated onion

1 teaspoon paprika

1 teaspoon kosher salt

1 teaspoon garlic powder

1 teaspoon freshly ground black pepper

1 whole chicken, 4 to 5 pounds

2 teaspoons of vegetable oil

1 can (12 ounces) of Coke or Beer

Instructions:

Combine all of the above ingredients except the chicken, vegetable oil, and coke or beer.

Remove and discard neck, giblets, and extra fat from chicken. Rinse chicken, inside and out, under cold water and pat dry with paper towels. Spray with cooking spray or brush everything with the vegetable oil and season, inside and out, with the dressing.

Open the can of Coke or Beer and pour in about ⅓ of the Coke or Beer. Place the partially empty can on a flat surface and place the chicken on top so that the can fits inside the cavity of the chicken. Move chicken to grill, keeping can upright. Carefully balance the chicken on top of the Coke or Beer can. Grill over indirect medium heat until juices run clear and internal temperature reaches 170°F in the breast and 180°F in the thickest part of the thigh, 1-1/4 to 1-1/2 hours. Wear oven mitts or grab two oven pads, carefully remove the chicken and can from the grill, being careful not to spill the Coke or beer because it will be hot and could burn you. Let the chicken rest for about 10 minutes before removing it from the can. Discard Coca Cola or Beer. Cut the chicken to your liking and immediately.

Serves from 4 to 6

Note: For a sweeter chicken use Coca-Cola.
